How it all started?

In December 2018, as I made the journey home for Christmas on an 8-hour flight, I found myself immersed in the pages of “Noma’s Guide to Fermentation.” Little did I know that this chance encounter with a book would set the stage for an incredible journey. During that holiday season, a serendipitous encounter at a Christmas Market in Lithuania introduced me to a SCOBY, and I decided to bring it with me to the UAE. Little did I know that this decision would mark the beginning of an extraordinary adventure.

After numerous attempts, some less successful than others, I finally succeeded in crafting something truly delightful a batch of kombucha that was not only drinkable but truly exceptional. At first, my husband was skeptical, but as my skills improved, he took over the brewing process and turned it into a precise science.

In 2019, we took our first bold step into the market, showcasing our kombucha at the Ripe Market in Abu Dhabi and Dubai. The response was overwhelming, and we quickly sold out. It was a significant milestone and a testament to the potential of our product.


By 2020, guided by the recommendation of an entrepreneur friend, we decided to participate in the Aldar-NYU organized Mannasah competition for F&B ventures. To our delight, we emerged as winners, receiving a fitout contribution that allowed us to kickstart our journey in Mina Souq, Mina Port.

From 2020 to 2022, we embarked on an intensive journey of experimentation, conducting over 800 trials, meticulously measuring every detail, and collecting invaluable feedback. While the challenges posed by the pandemic were unforeseen, they also provided us with the time and opportunity to fine-tune our craft.

Finally, in December 2022, the YALA Kombucha bar opened its doors to the world. Word spread quickly, and we were invited to various events and prestigious venues, marking the beginning of an exciting chapter. In 2023, we get our first Global Kombucha Award for our Ginger & Lemon flavor.

As we step into 2024, we’re gearing up to expand our business and introduce new products to delight your taste buds. Stay tuned for the next chapter in our kombucha journey.
